Summer Cocktails to Refresh Your Summer

Ready, Steady, Shake

This is the perfect season to enjoy some quality time outdoors, and what’s better than doing just that whilst sipping a fresh and tasty cocktail in the sunshine?

Frosé Strawberry Daiquiri

Ingredients (serves 8)  

  • 1 bottle dry rosé chilled (750 ml) 
  • ¼ cup rum 
  • 1 16 oz container frozen strawberries in syrup (partially thawed) 
  • 1 cup sliced fresh strawberries 
  • ¼ cup of sugar or to taste 
  • 3 cups of ice 

Method  

  1. Combine frozen strawberries, rum, sugar, and half of the rosé  
  2. Blend until combined  
  3. Add the remaining rosé and ice, blend until smooth  
  4. Serve

Rosemary Grapefruit Refresher

Ingredients (serves 2)  

  • 60ml vodka  
  • 90ml grapefruit juice  
  • 1 tbs rosemary simple syrup  
  • Soda water  
  • Rosemary sprigs  

Method  

  • Combine vodka, juice and syrup in a cocktail shaker with ice. Shake to combine and pour into a cocktail glass with ice. Top with soda water and garnish with rosemary sprig. 

Aperol Spritz

Ingredients (serves 4)  

  • 400ml aperol  
  • 400ml prosecco  
  • 2 oranges  
  • 600ml soda water  
  • 4 cups crushes ice  
  • Garnish: 4 rosemary sprigs  

Method  

  • Fill 4 large cocktail glasses with crushed ice. Add 100ml aperol and 100ml prosecco to each  
  • Juice one orange and divide between glasses. Peel thin strips from the orange for garnish  
  • Slice the other orange and add to each glass  
  • Top with soda water and garnish with rosemary sprigs

Pineapple and Passionfruit Mojito

Ingredients (serves: 4-6)  

  • 1 pineapple  
  • 50 ml pineapple juice  
  • 10 fresh mint leaves  
  • 2 limes slices  
  • 150ml rum  
  • 4 passionfruit  
  • Soda water  
  • To serve: ice, lemon, mint  

Method  

  • Blend pineapple, juice and sugar together until puree  
  • Combine the puree, rum and passionfruit in a jug with soda water and mix  
  • Serve 

Blackberry Vodka Tonic

Ingredients (serves 4)  

  • 1 cup vodka  
  • 1 cup fresh blackberries  
  • 2 cups tonic water  
  • 1 lime, sliced  
  • Garnish: ½ cup fresh blackberries  

Method  

  • Make the blackberry vodka: combine blackberries and vodka in a jar with an airtight lid  
  • Store vodka mixture in the fridge for 3 days until pink in colour  
  • Strain infused vodka 
  • Fill 4 cocktail glasses with ice  
  • Divide blackberry vodka into the 4 glasses (approximately 60mls)  
  • Divide tonic water into glasses  
  • Squeeze the lime juice into each drink, use the slices for garnish  
  • Garnish with blackberries
